Objectives: This session will help participants understand the current practices of school menu planners for children with food allergies in California.
Description: This session will report on the results of research completed as a doctoral dissertation in coordination with Iowa State University. The purpose of this research study was to assess the skills, knowledge, and perceived levels of confidence of child nutrition program menu planners in one state to design and implement menus for children with food allergies. This study also identified menu planning protocols used in the accommodation process, reported frequency of menu modification, and reported costs to produce meals modified for children with food allergies in schools in California.

Speaker Bio:
Lynnelle Grumbles is just finishing her doctoral dissertation at Iowa State University. She is the Director of Nutrition Services at Visalia Unified School District in central California. She has 28 years of experience in child nutrition programs, is a past CSNA president, and currently the West Regional Director for SNA.
