Objectives: Attendees will be able to describe the principles of smarter lunchrooms and how it improve student selection of healthier foods. They will be able to describe two examples of schools that have implemented successfully and will have practiced redesigning a lunchroom.

Description: Join the Movement for Smarter Lunchrooms! This two part session will cover behavioral economics "the practice of altering the physical environment in order to affect students' selection and consumption behavior" which lies at the heart of the Smarter Lunchrooms Movement (SLM), developed by Cornell University
In SLM part two, you will hear how about the successes in implementing the Smarter Lunchrooms Movement (SLM) in California. You will practice redesigning lunchrooms to apply the principles of the SLM. You will also have an opportunity to think through how you can take SLM back to your school and increase meal participation, reduce plate waste, and increase student consumption of healthy foods.

Kathryn Hoy (RD, Master of Food Nutrition, 2010 - Bowling Green State University, OH) is an Extension Support Specialist in the Charles H. Dyson School of Applied Economics and Management at Cornell University and the Manager of the Cornell Center for Behavioral Economics in Child Nutrition Programs (BEN).
Kathryn is responsible for the daily operation tasks, program outreach, and stewardship of BEN's many research opportunities and projects. Kathryn is the Director of PR & Marketing for the Dietetic Practice Group the Nutrition Entrepreneurs and assists with the development and implementation of several child health related non-profits.
