"Seed to Serving Line: Food Safety & School Gardens"Key Areas: Operations

Objectives: Currently there are over 3000 school gardens nationwide. And there is strong support at the USDA level to continue to expand this popular program.
Child Nutrition professionals and staff in kitchens are increasingly being called upon to assist these school and district level initiatives in preparing garden site grown fruits and vegetables for classroom activities and /or to include them as part of the meal service in the cafeteria.
This course will provide interested participants a "School Garden Food Safety 101". Allowing them to evaluate the processes being used in growing the vegetables, understanding some key terminology used by the "farmer", and how to find resources to implement safety and sanitation procedures to safeguard the health and well being of our customers.

Ralph is the Administrator of Child Nutrition at Pasadena Unified SD. With over 23 years experience as a child nutrition professional, Ralph has a knowledge base that has helped maintain financially solid programs by focusing on systems and increasing student satisfaction and participation.
