Objectives: Allergen Management begins with basic information around food allergens, such which role they play in foods and how ubiquitous ingredients are derived from them, such as soy lecithin. I will provide a comprehensive review of the specific knowledge that is required by the 2017 FDA Model Food Code around Allergens.

Description: Up-to-date information regarding food allergens and the effective management of food allergens throughout the flow of food. Information presented includes a comprehensive discussion around how allergens appear in foods and also how to recognize an allergen when reading a food label. We provide simple strategies that work and are easily implemented.
