Objectives: Participants will become familiar with:
  1. NSLP requirements for fruits and vegetable offerings
  2. Serving ideas for tray lines to maximize visual appeal of fruit and vegetable offerings
  3. Playful "challenges" that encourage kids to try new fruits and veggies
  4. "Reward-systems" that don't involve food



Description: This session will focus on ways to encourage fruit and vegetable consumption among school children from the trayline to the classroom and out into school gardens.

Jamie Kubota - San Jose State University
Speaker Bio:
A classically trained pastry chef, Jamie Kubota balanced her love for pastries with healthy cooking. She went on to earn a Master's of Science in Nutrition and the RD credential and is now an Assistant Professor of Food Management at San Jose State University where her research interests include culinary medicine and hands-on nutrition education programming.
