Objectives: The objective is to educate food service directors about the challenges in getting a kitchen designed for a new school or a renovation. The session will explore what a food service consultant is, the players involved, a cookbook approach to the design process and ideas about equipment trending in K-12 kitchens. This presentation was given at the NorCal School Nutrition meeting in Santa Cruz in May.
Description: Do you lie awake at night wondering what the best replacement option for your convection oven might be or how you are going to work with an architect to design a kitchen for a new school? This session answers the questions of who to work with and what the process is to achieve the goal of having the best possible design for maximum function and efficient flow in your kitchen.

Tim Stafford has 22 years experience designing food service facilities. He is a member of FSCI (Food Service Consultants Society International) and a licensed architect. He has been involved in the design of over 200 K-12 kitchens and has a thorough understanding of school food service.

Frank Muller has 22 years experience designing food service facilities. He is a member of FSCI (Food Service Consultants Society International). He has designed food service facilities in a variety of different market segments including K-12 and brings a unique design perspective because of his extensive background.
