Objectives: Participants will learn how to make strategic menu decisions that fit into the limits of the menu planning regulations. Participants will understand the impact of weighted nutrient analysis upon their decisions.

Description: Trying to figure out how you can serve the foods kids love and still meet the regulations? In this session, we will build menus and see the impact of each decision on the calories, sodium and saturated fat. Get a head start on understanding what needs to be done to meet the 2014-15 sodium standards.

Speaker Bio:
Meg Chesley began her foodservice career with Disneyland and Knott's Berry Farm. After graduating with a Bachelor of Science degree from California State University at Long Beach in Dietetics and Food Administration, Meg served more than twenty-two years as a school foodservice professional for the Montebello Unified School District, Norwalk-La Mirada Unified School District and the Corona- Norco Unified School District. Meg is known nationally for the development of the school marketing concept "Campus Catering™", for innovative dining room design and getting out of the box with school lunch.

Meg has a distinguished career, being recognized in the following ways:

  • USDA Best Practices Award for Marketing
  • California Department of Education Outstanding Program Award

Meg began her own company, A Higher Level, in 2002 to provide business, marketing and training tools to school districts across the United States. She has been training nationwide for more than 20 years.
