Objectives: Upon completion of this session, participants will be able to:
- describe the content and function of sodium in foods;
- use meal patterns and planning to reduce sodium to USDA Target 1 levels;
- identify product substitutions and lower sodium options within food categories; and
- describe methods of cooking and seasoning to create delicious, low-sodium meals that meet Target 1 levels.
Description: The deadline for Target 1 sodium reduction is quickly approaching. Learn which foods contain sodium in school meals, the function of sodium in foods, and how to identify low-sodium alternatives. Participants will learn menu-planning strategies to reduce sodium through meal patterns, healthier cooking techniques, and creating flavorful, low-sodium menu items.

Jessica Beaudoin - Providence Little Company of Mary Medical Center, Torrance
Speaker Bio:
Jessica Beaudoin is a Registered Dietitian (RD) currently working at Providence Little Company of Mary Medical Center. Jessica has previously worked as a consultant with Hawthorne School District in Southern California, ensuring compliance with the nutrition standards of the Healthy, Hunger-Free Kids Act of 2010. A strong interest in food and nutrition policy and science, Jessica serves on the CSNA Nutrition Standards Committee. Jessica's undergraduate degree was in Culinary Nutrition at Johnson & Wales University in Rhode Island, and has since obtained her RD credentials and Masters degree in Nutritional Science at California State University, Long Beach.
