Objectives: Use research to show why the USDA is recommending lower sodium intake and also to discuss if there is currently enough research to make recommendations for a school population.
Description: Sodium is an important topic, especially in school meals. This session will address the current issues. We will talk about (pros and cons) of limiting sodium in school foods. Discussion will entail why we want to reduce the level; the cons of reducing too much; and the effects of consuming too much/too little sodium (ex. links between increased intake of sodium in younger years and long-term health consequences); and why manufacturers are having trouble reducing sodium levels. It'll be a detailed overview on the sodium "buzz".
