Objectives: Participants will leave with new ideas and strategies for scratch-cooking in any type of facility.
Description: Most school food service folks want to incorporate scratch-cooking into their programs. Of course, these are the same folks who have limited or aging equipment, untrained employees and a storeroom the size of a broom closet. Learn ways that scratch cooking can be added at different levels to enhance your program.

Sally Spero, SNS, has worked in school food service for over 25 years in districts large and small. She is the recipient of numerous awards including the 2009 FAME Silver Spirit Award. She speaks and writes frequently on school nutrition-related topics and the is Editor of CSNA's Poppy Seeds magainze

With over 25 years of experience as a chef and culinary instructor, Jim Dumars brings a wealth of knowledge to the school food service field. Mr. Dumars was the recipient of the 2014 CSNA Nutrition Recognition Award, honoring a person who has made a significant contribution to improving nutrition for the children of California.
