Objectives: Recognize the value of pork in a healthy diet - the nutritional value and the evolution to today's exceptionally lean products.

Identify how pork can be part of a balanced diet and a weight loss tool as well.

Understand the methods by which farmers raise pork to ensure the safety of food and the well being of the animals.

Description: The Power of Pork: learn how this nutrient-dense food fits into a healthy diet and how farmers are raising pigs today to ensure a safe and healthy food supply. For example, a USDA study shows that pork tenderloin is as lean as skinless chicken breast and the American Heart Association has certified it as a heart-healthy food. And because it has changed so dramatically, demand for U.S. pork has grown worldwide making American farmers leaders in the global food marketplace.

Dr. Peggy Anne Hawkins - Cannon Valley Veterinary Clinic
Speaker Bio:
Dr. Peggy Anne Hawkins is a three-time graduate of Iowa State University, Ames, Iowa: BS (Animal Science) 1982; DVM 1991 and MS (Livestock Production) 1992. Between her undergraduate and veterinary degrees, she served as a Peace Corps Volunteer in Lesotho, Africa. It was her experience as a volunteer working in a developing country that influenced her decision to specialize in livestock and specifically pork production. Dr. Hawkins' career has taken her all over the world talking about respiratory diseases in swine. She lived in New York City for six years as a Veterinary Medical Manager for Pfizer Animal Health. As a Technical Service Veterinarian for Monsanto Choice Genetics, she revisited her Animal Science roots. Then seven years ago, she returned to the hog barns of the mid-west and joined a veterinary practice. Dr. Hawkins lives in Northfield, Minnesota working for Veterinary Provisions, Inc. as a Swine Veterinarian/Director of Research and as a microbiologist for Aurora Pharmaceutical, LLC
